A rich and juicy Cabernet from the 2019 vintage, where the grapes slowly ripened well into November. Black cherry and red currant fruit compliment the sweet oak spice from 18 months aging in oak, of which 22% was new. One third of the Cabernet Sauvignon grapes were dried in the traditional appassimento method to add further depth, texture and complexity. With its smooth tannins and bright acidity this wine will pair well with summer BBQ and braised meats as cooler weather sets in.
