This Cabernet Sauvignon hails from the ‘2019 miracle vintage’, where the sun finally came out in the fall and gave us absolutely perfect ripening conditions from September right into November. The ripeness is evident in the nose, with black currant jam, plum, coffee and spice. The palate has great depth and texture thanks in part to the use of partial appassimento and ripasso techniques in the winemaking process. The balance of acidity, tannin, alcohol and flavour concentration make this very drinkable on its own, but even better paired with beef or lamb. Enjoy now and over the next 5 years.
